Bassa & shrimp risotto. The Bassa people are a West African ethnic group primarily native to Liberia. They form a majority or a significant minority in Liberia's Grand Bassa, Rivercess, Margibi and Montserrado counties. In Liberia's capital of Monrovia, they are the largest ethnic group.

  • 1 bassa fillet.
  • 6-12 mini shrimps.
  • 3 shallots, chopped.
  • 5 sundried tomatoes, chopped.
  • 1 tbsp paprika.
  • 2 tbsp parmesan.
  • 2 cloves garlic, chopped, fried.
  • 1 tbsp basil, fried.
  • 3/4 cup cream.
  • Sear fish for 2 mins each side, add garlic and basil, then add cream and rice, then add all other ingredients and cook for 15 mins.
