Banana bread

Banana bread. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. This is a very moist banana bread with lots of banana flavor. There is a bit of spice for those who like a bit of 'extra' in their banana bread. Ingredients

  • 200 g of sugar

  • 220 g of butter

  • 15 g of baking powder

  • 5 g of bicarbonate of soda

  • 1/4 tsp of salt

  • 5 g of vanilla essence

  • 5 of overripe bananas (1 for topping)

  • 350 g of plain flour

Steps

  • Preheat oven to 200’C
  • Mix all the ingredients except bananas and flour.
  • In a separate dish mash all the bananas but keep one for the topping.
  • Add bananas to cake mix and mix through.
  • Sieve your plain four and gradually add to mixture.
  • In a greased cake tin pour your mixture into it. Rest for 5 minutes
  • Place a shallow dish with an inch worth of water at the bottom of the oven.
  • Bake the loaf for 20min at 200’C.
  • Lower oven to 180’C and bake for further 40 minutes.
  • Take out of oven and let cool.

In another bowl, combine the eggs, bananas, oil, buttermilk and vanilla; add to flour mixture, stirring just until combined. Stir in the sugar, beaten egg, and vanilla extract. There are several possible explanations behind this. You may have added too much or too little baking soda, or maybe your baking soda has already gone bad. Baking is an exact science, so little mishaps like this could be detrimental to your bread!
