Ingredients

  • 3 cloves of Garlic

  • 1 of medium tomato

  • 4 cups of spinach

  • 2 of eggs

  • 1 tsp of olive oil

  • 1 pinch of salt

  • 1 pinch of black pepper

  • 1 pinch of turmeric

Steps

  • In a saucepan, Slice the garlic and Saute it in the olive oil for 1 min.
  • Chop the tomato and roughly chop the spinach. Add them to the saucepan and cover with the lid.
  • Let them reduce down for about 3-5 mins.
  • Add salt, pepper and turmeric. Break the eggs into the omelet and stir a bit. We don't want to completely stir the eggs.
  • Cook the omelet for another 1 min until the eggs are cooked.
