- Stuff chicken breast with the stuffing. Season the breast with olive oil, salt, and pepper. Top with chimichurri.
- Cover and bake at 350° for approximately 45 minutes or until thermometer in chicken and stuffing reach 165°

Pound the breasts with a flat, heavy. Add sausage and sauté, breaking up into small crumbles until cooked through. Add the onion and sauté a minute or two until softened. Remove to a bowl with all of the pan oil and stir in the breadcrumbs. When mixture cools, stir in the mozzarella.
