Zucchini fritters

Zucchini fritters. We LOVE zucchini patties/fritters and this will be a healthy alternative to our usual fried in oil variety. Great idea to use up garden zucchini! I substituted half the flour for bread crumbs and added garlic powder and a dash of Herbamere.

Ingredients

  • Prepare of Zucchini

  • It’s of Red lentils

  • You need of Flour

  • Prepare of Red onion

  • It’s of Chives

  • It’s of Smoked paprika

  • It’s of Salt

  • Prepare of Garlic powder

Steps

  • Grate zucchini, remove excess water, cook lentils.
  • Mix zucchini with lentils, add flour (1 tbsp?), onion and spices.
  • Frying: form patties, fry in oil. • Baking: add 1 tbsp oil, form patties, bake in 180C for 25 min.

Drain the zucchini and let cool in a medium mixing bowl. Once cool add Parmesan cheese, egg, flour, minced garlic, salt, and lemon to a bowl and mix until the mixture has a semi-creamy texture. Zucchini fritters made extra crispy and extra tasty with the addition of parmesan! Crispy on the outside, and moist but not soggy on the inside. Love how these are light on batter – just enough to hold it together.
