Cajun grilled salmon with mango relish

Cajun grilled salmon with mango relish. Squeeze fresh lime juice over grilled salmon, then top with mango salsa and serve. The ultimate entertaining meal, or perfect anytime you want an epic salmon dish. Cut salmon into four pieces, brush lightly with oil. Mix mango salsa ingredients (diced mango, cucumbers, red onions, fresh mint and mango juice) and set aside. Heat a gas grill on high. The ingredients needed to make Cajun grilled salmon with mango relish:

  • 7 oz of Salmon skin off

  • 1 of Olive oil

  • 1 of Cajun seasoning

  • 1 of Salt and pepper

  • 2 of Mangos

  • 1 each of Medium red and green pepper

  • 1 of Fresh jalapeno

  • 10 of Mint leaves

Steps to make Cajun grilled salmon with mango relish:

  • Preheat oven to 350
  • Oil both sides of salmon
  • Light salt and pepper both sides
  • Cajun seasoning on presentation side of salmon
  • Grill mark or pan sear salmon, both sides, bout minute and a half to three mins
  • Finish in oven till salmon is firm, about medium
  • Ahead of time, peel and fine dice mangos, fine dice peppers and mince mint leaves put all in a bowl
  • Add a splash of olive oil, salt and pepper to taste
  • Refrigerate till service
  • Take out salmon top with a heap of relish, enjoy

Season the salmon on both sides with the Essence, salt and pepper. Place the fish on the grill, skin side down and cook. I love salmon and mango together but this was just okay. My tomato didn't have much flavor so that may have something to do with it. I prefer my own recipe of salmon with mango puree: salmon fillet breaded in a mix of ground toasted almonds and sesame seeds then pan fried in olive/sesame oils; topped with a puree of mango sauteed garlic and red pepper rice wine vinegar and a bit of sugar.
