4 of egg whites

3/4 cup of sugar

1 tsp of vanilla extract

1 carton of cream whipped

1 can of crushed pineapple or drained mixed berries
Steps to make pavlova roll:
- pre heat oven to 130 degress celsius
- line the back of a baking pan with baking paper and grease lightly with butter
- whip egg whites and vanilla till soft peaks form then add sugar slowly bit by bit beating well with each addition when allsugar is added keep beating until sugar is dissolved and egg whites are thick
- spead egg white mixture on paper in a rectangle like a swiss roll bake for about 20 mins you want the top lighly brown but not hard its more like a marshmellow,when done cool on pan
- when cold fill with whipped cream and well drained pineapple or mixed berries roll like a swiss roll , you may need to use a knife to assist the rolling as it can stick a little (I find that makes it easier ) roll onto serving plate and dust with icing sugar if desired
- if using mixed berries simmer the reserved liquid with sugar to make a sauce to serve with it
For pavlova, in a large bowl, beat egg whites until light. Slowly beat in sugar until whites are stiff and shiny. looks like a rolled sponge, tastes different to a traditional pavlova but is quicker and easier to make.
