Gnocchi
Gnocchi. There is nothing like homemade gnocchi. They taste like potatoes with a bouncy texture, even without gluten. This gluten-free version uses a trick from the past when Italian cooks would toss potatoes into a fire or oven that was being cooled down so as not to waste the heat.

You need 4 of Lg potatoes

Prepare 1 1/2 cups of flour

Prepare of Keep extra flour for dusting. And salt for the water

You need of Couple tbsps of margarine for fry pan
Steps
- Peel cook potatoes and mash well..
- Strain, cool, break whisk egg, add to mashed potatoes mix in eggs, salt pepper..
- Fold to mix..
- Dust surface… keep extra flour… Mix thoroughly well..
- Break into half palm size squoval sizes..
- I used a comb (flour dust it repeatedly? Keep dusting the work area add gentle amounts of flour as the potatoes become sticky..
- Take small disks roll sideways over comb (ripple look).
- Add margarine to pan heat medium, or a bit of oil. Looking for that nice golden brown..
- Crisp both sides ** pay attention. Grate cheese ( hint I made an awesome meat sauce Ill add later.. but it's for the side. Make your favourite sauce..
- Watch they cook quickly in the pan! I used papertowel to assist w any bits of Grease. Added shredded X-old cheese, and put meat sauce in a side dish..
