Gnocchi
Gnocchi. There is nothing like homemade gnocchi. They taste like potatoes with a bouncy texture, even without gluten. This gluten-free version uses a trick from the past when Italian cooks would toss potatoes into a fire or oven that was being cooled down so as not to waste the heat.

Steps
- Wash, peel and cook potatoes.
- When potatoes is done(make sure it’s not over cooked).. mash and let it cool..
- Add flour,salt and egg to mashed potatoes and knead(this is why you need to let it cool so that the heat doesn’t cook the egg).
- Roll out on a board an cut as shown below.
- Now you can boil your gnocchi at this level but I like to shape mine (you can make it into any pattern of choice).
- In a pot of boiling water, put in dough.. it will sink to the bottom of the pot and come up when it’s done.
- Drain and serve as you wish (I already made tomato sauce so I mixed it in some sauce) Enjoy?.
