SALMON SALAD

SALMON SALAD. You can use leftover salmon if you like, but those new handy pouches of salmon are great to have on hand in the pantry for salads like this! This salmon salad is seasoned to perfection and makes for a great picnic side dish. Dijon and cream cheese give this salad the perfect creamy texture. This is a very quick and tasty great salmon salad that can be eaten as a sandwich on thickly sliced specialty bread (fantastic on foccacia). To serve as a salad, mound mixture on a bed of lettuce, or on an avocado half. To cook SALMON SALAD you need 11 ingredients and 2 steps quickly.

The ingredients needed to make SALMON SALAD:

  • 1 of (14.75oz ) can salmon drained

  • 2 tbsp of Cilantro Avocado yogurt dressing (I used Bolthouse Farms)

  • 2 tbsp of sriracha mayo

  • 2 of Small clove garlic, minced

  • 4 of Drained oil – packed sun-dried tomatoes, finely chopped

  • 6 of pitted manzanilla olives, finely chopped

  • 3 of Green onion, finely chopped

  • 2 tsp of rice vinegar

  • 1 of salt and freshly ground black pepper (pinch )

  • 2 of ripe but firm avocado, halved,pit removed

  • 2 tbsp of Almonds toasted (optional )

Steps to make SALMON SALAD:

  • In a bowl, combine salmon, dressing, mayo,garlic, sun-dried tomatoes, olives, green onions and vinegar mix. Add a little water to adjust texture, if necessary. Season with salt and pepper.
  • Spoon salmon salad into avocado halves, sprinkle with toasted almonds, if desired, and serve.

While tuna salad is the more common seafood salad, I think salmon salad is so much better. Add the salmon, carrot and celery and mix well.
