I rushed off to work this morning without remembering to take something for lunch. It is a quick and easy recipe to prepare. The salmon-avocado combination has become a trendy classic. The ingredients needed to make Avocado, smoked salmon and pickle sandwich:

  • 2 slices of bread

  • 1/2 of avocado

  • 1/2 of lemon

  • 1 slice of smoked salmon

  • 2 of medium gherkins

  • 1 handful of lambs lettuce

  • of Salt and pepper

  • 1 pinch of chilli flakes

Steps to make Avocado, smoked salmon and pickle sandwich:

  • Mash the avocado. Add lemon juice and salt and pepper
  • Spread on to 2 slices of bread
  • Add the salmon on to one slice. Squeeze some more lemon juice over it
  • Thinly slice the gherkins and place on the salmon
  • Wash the lambs lettuce and place.on top
  • Add the chilli flakes
  • Cover with the other slice of bread and enjoy!!

Mash the avocado with half the lemon juice and season well. Spread the avocado over each slice of toast, then lay the beetroot and salmon on top. Put carrot, cucumber, vinegar and sugar in a medium bowl and stir to combine. Drain well and pat dry with paper towel. To make each sandwich, spread half of the pesto over the bottom slice of bread.
