Ingredients

Prepare 300 g of x the best tomatoes available

It’s 2 of x slices of day old ciabatta bread

You need 1/4 of x small red onion

You need 2-3 cloves of garlic

Prepare a few of basil leaves

Prepare of lots of extra virgin olive oil

You need of salt and pepper

It’s of reduced balsamic vinegar (opt)
Steps
- Slice the tomatoes into 1 cm approx pieces (not uniformed) and fine dice the red onion.
- Chop 1 clove of garlic, sprinkle with flaky salt and crush with the flat edge of a large knife (or use a garlic crusher) then slice or tare the basil leaves.
- Season the tomatoes with olive oil salt and pepper and toss, leave this mixture to mature for 10 – 20 minutes in the fridge.
- Slice the ciabatta to around 1 inch thickness and rub both sides with a half a clove of garlic.
- Drizzle both sides of the bread with olive oil and season with salt and pepper, place croutons in a hot griddle pan. If you don't have a griddle pan you can toast the bread in a very hot oven for about 10 minutes..
- Griddle the bread to achieve bar marks on both sides, when well marked rub with the garlic again while its still warm..
