1 of Whole Wheat Pita Pocket

1 Can of Chicken, drained

1 Tbs. of Onion, minced

1 Tbs. of Celery, minced

1 Tbs. of Mayo

1/2 Tbs. of Basil Pesto

1-2 Slices of Tomato
Steps to make Pesto Chicken Pita:
- Slice pita in half and carefully open so you can fill it.
- In a bowl, mix together all ingredients except tomato slices.
- Place tomato slices in pitas, cut in half if needed.
- Place half of chicken mixture in each pita half.
Spread with pesto and sprinkle with cheese. Place on an ungreased baking sheet. Place in a bowl coated with cooking spray, turning once to coat top. In a large nonstick skillet over medium heat, cook the chicken, onion, peppers and mushrooms in remaining oil until chicken is no longer pink and vegetables are tender. Remove from the heat; set aside.
