My bruschetta. Bruschetta is a classic Italian antipasto (appetizer) or snack that consists of grilled bread slices rubbed with olive oil and garlic, topped with ripe tomatoes, fresh basil, and garlic. In Italy, Bruschetta is often prepared using a 'brustolina' grill. This delightful recipe was created as a way of salvaging bread that was about to go stale.

Ingredients

  • Prepare 9-10 of Roma tomatoes, remove white part and seeds, cut small cubes

  • It’s 5 of garlic cloves, minced (less if you are afraid!)

  • Prepare 1/2 of medium red onion, chopped fine

  • You need 1/2-3/4 C of fresh basil chopped

  • It’s 4 Tbsp of balsamic vinegar

  • It’s 2 Tbsp of olive oil

  • You need 1/4 tsp of salt

  • Prepare 1/4 tsp of pepper

Steps

  • Combine all the ingredients in a medium bowl. Let rest for 20 minutes to overnite for flavors to meld together..
  • Serve on toasted baguette or your favorite crisp cracker. You can't stop eating this!.

I absolutely love bruschetta, and this recipe is authentic and very close to the recipe that I use, so I'm reviewing this one to put in a good word for it. The only things that I do differently are to brush the bread with a little olive oil before toasting, and to leave out the onion and instead add shredded mozzerella cheese to the mixture. Bruschetta is one of my favorite flavor profiles. I love the fresh tomatoes paired with the garlic and basil. Add it to some toasted bread with a little balsamic vinegar and you have one of the easiest and fanciest appetizers out there!
