Ingredients

  • Prepare 3 tbsp of Olive oil

  • Prepare 1/4 of cucumber

  • Prepare 1/4 of tomato ?

  • Prepare 1 of small spoon preserved lemon ?

  • You need 1 tbsp of onion

  • You need of Salt

  • It’s of Pepper

  • It’s 2-3 of sliced of bread ?

Steps

  • Dice tomato, cucumber, preserved lemon, and onion..
  • Mix well with olive oil, pepper and salt..
  • Toast sliced bread and spread olive oil on them..
  • Place the mixed vegetables on the bread, enjoy!.

Next time I may experiment with mozzarella for a caprese-inspired version, but the Monterey Jack worked extraordinarily well with the Salsa Brushetta. Allow me to suggest this Spanish version of bruschetta (known in Spain as pan con tomate). It's delicious, and the good news is that it's just as easy if not easier to make as the Italian version. If I had to sum up this Spanish bruschetta, I'd say that it's far far tastier than the sum of its parts. I've made this version of bruschetta for several years but when I brought it to our last gathering my husband commented that I'd never posted it on the blog.
