Pad Thai Cucumber Salad

Pad Thai Cucumber Salad. This cool, crunchy salad is a nice counterpoint to pad thai. It also goes well with just about any Asian-style stir fry. You can use any combination of shallot and/or scallion, or even red onion, and whatever kind of chili you have around. Make the sauce: Put the peanut butter, tamari, vinegar, lime juice, hot sauce, ginger, garlic, honey and sesame oil in a food processor and run continuously until smooth. This sweet and tangy summer salad of cucumber, cilantro, and peanuts with just a hint of heat is always a hit at picnics and potlucks. Ingredients

  • 1 each of large cucumber , mandolin into "noodles"

  • 1 each of large carrot, mandolin into "noodles"

  • 1/4 each of green bell pepper, chopped fine

  • 4 each of radishes, chopped fine

  • 3 tbsp of soy sauce

  • 1 clove of garlic, pressed

  • 1 tbsp of sriaracha sauce

  • 1 tbsp of honey

  • 1/2 each of lime, juice and zest

  • 2 tbsp of Cilantro chopped fine

Steps

  • Run your cucumber and carrot through a mandolin to make "noodles"
  • Chop fine your bell pepper and radishes
  • Combine all vegetables
  • Mix together your garlic, soy sauce, sriaracha sauce, lime, cilantro and honey to make a dressing
  • Pour dressing over the vegetables and mix well. Serve cold or room temperature.

Note that the longer this salad sits, the more liquid will gather at the bottom of the bowl or plate (juice from the cucumber). In the meantime, make the Dressing, by combining all the ingredients in a small sauce pan.
