Mango Cake
Mango Cake. The glaze was the best part. This mango cake recipe is from the kitchen of Mary Moehling, the mother of Robert Moehling, who owns the popular Robert Is Here fruit stand in Homestead, Florida. The cake is made with fresh oranges, limes, and mangos, which are sold by the ton at the family fruit stand. In another bowl, combine the flour, baking powder, salt, cinnamon and nutmeg; gradually beat into sugar mixture and mix well. Make sure to use paper towels to pat those mango slices dry and get rid of excess juices. This moist, mango pound cake needs nothing more than a dusting of confectioner's sugar to set off it's classic looks. With rich tropical mango taste, and subtle notes of coconut, this easy cake is an excellent dessert to keep in mind when you have a houseful of guests.
