Pavlova roll

Steps to make Pavlova roll:
- Beat egg whites and salt until quite stiff,add sugar and beat until dissolved.
- Fold in vanilla cornflour and vinegar.
- Put in lamington tray 23x30cm lined with baking paper
- Sprinkle with one teaspoon of cinnamon and one of sugar
- Cook 10min on 375°F or 190c then let cool.
- Fill with whipped cream and fruit or a peppermint crisp and cream and roll up.
For pavlova, in a large bowl, beat egg whites until light. Slowly beat in sugar until whites are stiff and shiny. looks like a rolled sponge, tastes different to a traditional pavlova but is quicker and easier to make.
