400 g of dried flat rice noodles

200 g of sliced chicken

200 g of peeled green prawns

2 of eggs lightly beaten

1 of Brown onion sliced

1 of red capsicum diced

1 tablespoon of garlic

1 tablespoon of red Thai paste

1/2 cup of spring onions chunky sliced

of I lime
-
1 tablespoon of sugar (prefer brown)

60 ml of soy sauce
-
1 tablespoon of fish sauce
-
1 cup of bean sprouts
-
1/2 cup of chopped peanuts
-
Bunch of coriander (washed)

of Vegetable oil
Steps
- Soak noodles in large container of hot water, (you can just use hot tap water)
- Use a wok or large saucepan and heat enough oil to coat the bottom. When the oil is just smoking, add the egg and swirl to form a thin omelette. Cook until just set, remove from the pan and thinly slice.
- Bring wok back on heat, and Stir-fry the chicken and prawns 2-3 minutes then add onion, and capsicum over high heat for 2-3 until the onion has softened a little then Add garlic and the paste, to draw out the aromatics
- Strain noodles and add to wok, with soy, fish sauce, sugar and juice of half of lime. Cook 2-4 minutes till noodles soften, then add eggs back in.
- Serve on plate with garnish of sprouts, coriander, peanuts and freshly squeezed remaining lime.
