This pad kra pao (pork & holy basil-stir-fry) features a key ingredient: holy basil! And it only takes minutes to make. When frying the chillies, the all too familiar choking fragrance of the chillies is emitted from the kitchen. Serve on a bed of rice with a runny fried egg on top. 100 grams of Ground chicken

3 of Green beans *cut into 5 mm lengths

1/4 of Onion *thinly sliced

10 of Straw mushrooms *cut in half and boiled

1/2 of Red shishito pepper *chopped

60 ml of Water

1 tbsp of Vegetable oil

1 bunch of Holy basil

100 ml of Shredded cheese

1/4 of Onion *sliced

of Seasoning ingredients:

1 tbsp of Oyster sauce

1 tbsp of Fish sauce

1 tsp of Thai seasoning sauce

1 tsp of Sugar

1/4 tsp of Siew dam (black soy sauce)

2 tsp of + 1 dash bit of water Tapioca powder (*or katakuriko or cornstarch if not available)

250 grams of All-purpose flour

10 grams of Sugar

4 grams of Salt
-
160 grams of Water

1 tbsp of Olive oil

1/2 tsp of Dry yeast

1 of Corn meal
Steps
- Knead the pizza dough, and let it proof for 1 hour at around 30℃. A 2nd proofing is not required. Roll it out into a 30 cm diameter circle right before baking.
- While proofing the dough, crush the ★ ingredients with Thai mortar and pestle. Saute them in a heated frying pan with the oil until fragrant. Add the ground meat, slowly add the water, and stir-fry.
- When the chicken starts to cook through, add the onion, green beans, and straw mushrooms, and continue stir-frying. Add the mixed seasoning ingredients.
- Once everything is cooked through, and the liquid starts to evaporate, stir in the dissolved tapioca powder in water to thicken the sauce.
- Add the holy basil at the end, stir, and the topping is ready.
- Preheat the oven to 250℃. Spread out the Step 5 topping, and sprinkle with the onion, shishito pepper, and garlic. Drop one egg on top, and bake for 7 minutes total.
- When the edges of the crust start to turn brown, sprinkle with the shredded cheese, drop one more egg on top, break the yolk, and bake for remaining 3 minutes.
- Top with the deep-fried holy basil and serve.
Well, to be precise there was an egg for me, and no egg for Mr. Scrummy, who hates eggs on top of anything! Heat large skillet over high heat. Stir in shallots, garlic, and sliced chilies. Add the onions and stir-fry until browned and slightly caramelized.
