Ultimate Banana Bread

Ultimate Banana Bread. To me, the ultimate banana bread is slightly healthy, and slightly indulgent, and it is hard to find a recipe that can keep that balance. We added banana flavor without introducing too much moisture to our banana bread recipe by microwaving the fruit and draining it. We then simmered the banana liquid in a saucepan until it reduced and incorporated it into the batter. In another bowl, combine the eggs, bananas, oil, buttermilk and vanilla; add to flour mixture, stirring just until combined. The banana flavor is dramatically intensified and the loaf baked up nice and high (all of the banana bread recipes I've made over the years have been short and squat). Ingredients

  • 280 g of Self-Raising Flour

  • 1/2 Tsp of Salt

  • 110 g of Butter

  • 190 g of Caster Sugar

  • 2 Tbsp of Honey

  • 2 Tsp of Cinnamon

  • 3 of Ripe Bananas

  • 1 of Cap Vanilla Extract

  • 2 of Eggs

  • 4 of Squares of Dark Chocolate

Steps

  • Pre-heat the oven to 160 degrees. Place the ripe bananas in the oven and bake on a tray for about 10 minutes.
  • Cream the butter and sugar together. Add the vanilla extract, cinnamon and honey. Add the eggs.
  • When the bananas are brown peel and add to the butter, mash together. Turn the oven up to 180 degrees. Add the flour. You should have a thick batter which falls off the spoon easily.
  • Put the batter in a lined (or greased) baking dish or cake tin. I sprinkled more sugar and honey on top. Break up the chocolate and poke into the batter. Bake for about 25- 30 minutes.

We wanted a moist, tender loaf chock full of pure banana flavor with a gentle sweetness. In a large bowl, whisk the flour, baking soda and salt together. Microwave on high power until the bananas are soft and have released.
