Buttered Sirloin Steak with Chimichurri Sauce. Love chimichurri sauce here it is on some steak. I was in the mood for this sauce and butter bourbon sauce. Blitz until you have a sauce that is nearly pureed, but still has some texture. First, make the chimichurri by placing the herbs and garlic into a food processor (or blender). 1-1/2 pound of sirloin steak 1-1/2 thick

1/2 teaspoon of kosher salt

1/2 teaspoon of fresh ground black pepper

1/2 stick of butter

4 tablespoon of chimichurri sauce see my recipe
Steps to make Buttered Sirloin Steak with Chimichurri Sauce:
- Get a skillet or pan hot and sear the steaks
- Turn as needed about every 3-4 minutes
- Add butter after fourth turn.
- Cook till your desired doneness let rest 5 minutes
- Add chimichurri sauce atop the steak

In the last minute of cooking, drop butter in pan and use spoon to baste steak with butter ensuring it gets coated evenly. While steak is resting, in your food processor combine all chimichurri ingredients and blend until well combined and you get your desired consistency. Transfer seared steaks to empty space on baking sheet. Add asparagus to baking sheet and toss with ½ tsp. olive oil and a pinch of salt and pepper. Drizzle the chimichurri sauce over the steak strips and serve.
