Steps to make Marinated chimichurri salmon in oven served with spices rice:
- Heat up oven 200° for 20min
- In the mean time, blend all the A ingredients. Slightly blend, still can see the chunks of the ingredients. Then is ready to do the marinated the salmon.
- Pour little by little on the salmon slices, gently massage and lay pieces by pieces on the baking tray. The rest of the marinated dressing, pour on the salmon.
- Switch the oven into 180°. Put in the tray with salmon for 10min. Then is ready to served.
- Add the butter in a pot, when the butter start melting add in the ginger and lemon grass puré. Stir well, next add in the rice, continue to stir until get the aroma. Last, add in the water. Let it boil up then turn into lowest heat. Cook around 15min, add in the salt and pepper to taste before serving.
I served the salmon over Whole Grain Brown Rice by Lundberg Jubilee(from Whole Foods). I also cooked a quick/delicious mixed vegetable dish (Fire Roasted Vegetables from Trader Joes) and placed the veggies on top of the rice and on sides of the salmon. Grease a baking tray, then sit the salmon, flesh-side up, on the tray. While the salmon is cooking, gently mix all the salsa ingredients together with the roughly chopped coriander. Place the salmon on top with the skin side down.
