Hummus
Hummus. Hummus is a dish that has so many regional variations. And to try and decide which region's is more authentic is a biblical and political debate that I won't touch. It may be a bit salty, but for some that's the way it's supposed to be!
Ingredients

It’s 2 cups of cooked chickpeas (reserve the liquid)

Prepare 1/2 cup of tahini (sesame paste)

You need 1/4 cup of extra virgin olive oil, plus oil for drizzling

It’s 4-5 cloves of garlic, peeled, or to taste

It’s to taste of Salt and freshly ground black pepper

Prepare 1 tablespoon of ground cumin

Prepare 1 tsp of paprika or to taste,

You need of Chilli flakes, for garnish

Prepare 1 of Juice of lemon, plus more if needed

You need of Chopped fresh parsley leaves for garnish
Steps
- Put boiled chickpeas, tahini, garlic, olive oil, salt, pepper, cumin, paprika and lemon juice in a food processor and blend well..
- Add the chickpea liquid or water, as required, for a smooth paste..
- You can taste and adjust the seasoning accordingly as per your liking. You can also add more lemon juice, if needed..
- The hummus is now ready to be served! Transfer the hummus into a bowl, drizzle some olive oil on it and sprinkle some cumin or paprika along with the parsley..
