Grilled Salmon with Sweet Potato and Onion. Great recipe for Grilled Salmon with Sweet Potato and Onion. Another food and fire recipe and one of my favorites. I used mesquite chips on this one. Salt and pepper the top to taste. Add about ½ of the onion mix to the top of the salmon and pour the ¼ cup of the liquid from the skillet around the fillet. The ingredients needed to make Grilled Salmon with Sweet Potato and Onion:

1 lb of salmon of your choice

2 of sweet onions

2 of sweet potatoes

1 cup of Lowrys Carribean Jerk
Steps to make Grilled Salmon with Sweet Potato and Onion:
- Marinate salmon up to 4 hours but no less than one hour in the jerk marinade.
- Start your charcoal or fire up your gas grill. I add wood chips also. I add the vegetables in right when the coals are good and hot, and I put them direct on the coals or as close as you can get to the heat. At this point I pull the salmon out of the fridge and oil up my fish basket. After the veggies cook for about 15 minutes I add the salmon to the grill skin side down. Turn the veggies every so often and cook for approx ten minutes.
- Pull the food off grill and plate and eat. Its that easy. I add a little BBQ sauce to my salmon but you do it however u feel like.
Arrange the vegetables on the preheated sheet pan, lay the salmon on. I boiled the sweet potato with an apple and some nutmeg and a bit of milk and then whirled it in a food processor for a smooth puree. On top of that I put the spinach (no mushrooms) and then the grilled salmon with a touch of Asian chili sauce with pineapple. Plus some olive oil, salt and pepper! Transfer the salmon, peppers and onions to plates, sprinkle with the marjoram and serve.
