A.S.A.P. Dish: Asian Veggies, Salmon, Avocado, and Pasta. This Asian salmon is an easy and healthy dinner choice. The salmon and vegetables cook together on the same pan and are coated in a hoisin lime glaze. Quick and easy meals are my favorite way to do dinner, and this Asian salmon with vegetables is no exception. The salmon is first marinated in a sauce made with sesame oil, honey, soy sauce, rice vinegar, garlic, and ginger. Then, the salmon is baked in the oven. To make A.S.A.P. 1 lb of Ronzoni Tricolor Veggie Rotini

1-2 lb of Salmon (pan fried with lemon and spices)

1 lb of Asian Stir-fry Frozen (broccoli, sugar snap peas, carrots, water chestnuts, baby cob corn, red peppers, mushrooms). Comes with tangy ginger sesame sauce you can add optionally

1/2 lb of Fresh or Frozen Broccoli

1 of Large Hass Avocado sliced or cut in small cubes

1 of Large Red Tomato

1 Tbsp of sesame oil

4 of Spices (ex: chimichurri seasoning, garlic powder, himalayan sea salt, lemon pepper, various herbs)
Steps to make A.S.A.P. Dish: Asian Veggies, Salmon, Avocado, and Pasta:
- Boil Rotini as directed on package. Add tbsp of oil. (approx 7-10 mins).
- Heat pan on medium heat with Canola or Olive oil. I used Canola.
- Season Salmon. Pan fry salmon (approx 10-12 mins on medium to med-high heat). Squeeze lemon salmon while cooking
- Cook all vegetables in skillet (as directed on package). Add I can't believe it's not butter. Brown veggies. (approx 7-10 mins).
- Add additional broccoli to other veggies (approx 5 mins). Lightly season to taste.
- Cut Avocado and Tomato into cubes (the fruits) in a bowl. mix with sesame oil.
- Cut up salmon into pieces. Remove the skin (optional)
- Add veggies and salmon in serving bowl. Add fruit on top. Enjoy!
Complete with smoked salmon and avocado tossed with lemon and parsley This versatile side dish is so simple and quick that I had to share it. While the pasta cooks, prepare the sauce. Add the avocado, garlic, Greek yogurt, parsley, basil, lemon juice, salt, and pepper to a food processor or blender. To make the avocado sauce, combine avocados, basil, garlic and lemon juice in the bowl of a food processor; season with salt and pepper, to taste. With the motor running, add olive oil in a slow stream until emulsified; set aside.
