Salmon pie

900 g of puff pastry

200 g of chopped onion

500 g of salmon cubed

500 g of broccoli fork sized

2 tablespoons of lobster concentrate (depending on strength)

500 ml of full cream

200 g of mozzarella rough chopped (the kind that comes in liquid)

150 gram of feta cheese rough chopped

10 of eggs

of Salt & pepper

splash of oil

1/2 of Lemon
Steps to make Salmon pie:
- First split pastry in half and roll out so it can be fitted in 2 pie friendly oven trays. Bake them blind about 5 minutes on 200°C.
- Sweat onion and add to a big bowl
- Chop all other ingredients roughly and mix with onion squeeze the lemon in to.
- In a jug mix cream and lobster concentrate season with some salt and pepper and taste for approval =) Remember there are some eggs to go in next so lots of flavor is good.
- Mix in eggs(minus shells)
- Fill the part baked crusts with the mix and place in oven then pour from jug enough mixture in. (if walls are not high enough don´t be tempted to pour that last bit in a as it rises slightly upon cooking)
- Cook at 180°C for about 40 minutes. enjoy with super fresh salad
Flake salmon into large chunks and set aside. Set a sheet of puff pastry on a lightly floured surface. Transfer pastry to pie plate, allowing extra dough to drape over edge. Cut vents for steam to escape. While the potatoes are cooking, clean the canned salmon by removing any bones and skin.
