Fluffy Banana Bread. My Mother's banana bread recipe was handed down to her by her Mother and it is not the usual dense banana bread. It has a completely different texture and is light and fluffy banana bread recipe as opposed to the more traditional dense and heavy variety. It's almost a cake-like texture but with the amazing banana bread flavor.

Ingredients

  • Prepare 1 cup of all-purpose flour

  • You need 3 of eggs

  • Prepare 1/3 cup of sugar

  • You need 2 of mashed bananas

  • It’s 1 tsp of baking powder

  • You need 1/2 cup of melted butter

  • Prepare of 1 pinch salt

  • You need of Raisins (optional)

Steps

  • Add eggs and sugar, mix on high speed until foamy..
  • Add mashed bananas into the egg foam and mix on high speed for 1 minute..
  • Add flour, baking powder and salt. Mix on low speed until incorporated..
  • Add melted butter in the mixture and mix with a spatula until even..
  • Coat a baking pan with oil and pour the batter into it..
  • Sprinkle raisins on top of the batter and bake at 350 degrees F for about 35 minutes..
