It’s 1 kg of mutton with bones, washed and kept aside
You need 2 of medium-sized onions, finely chopped
It’s 2-3 of tomatoes pureed
It’s 1-2 of green chillies sliced
Prepare 3 tablespoons of ghee
Prepare 1 teaspoon of fresh ginger cut into juvenile
Prepare 1 teaspoon of fresh garlic grounded
You need 5-6 of green cardamoms crushed
You need 1 of clove
You need 1 of Bay leaf
It’s 2 of black cardamoms
You need 1 of cinnamon stick
You need 2 of peppercorns
It’s of Fresh coriander and mint leaves chopped for garnish
I highly recommend using a 'meat masala' which really takes the guesswork out of this, and I used Lala's Mutton Curry masala for this one. You can go ahead and try Shaan as well, a brand which make fantastic masalas. Based on a traditional Pahadi family recipe, this curry is spicy and full of flavor.
