Mutton curry

Mutton curry. In India, mutton often refers to goat meat instead of sheep. It is cooked in numerous delicious ways. This simple, yet delicious version of goat curry or mutton curry is also easy to put together, and you can use goat meat or sheep.

Ingredients

  • It’s 1 kg of mutton with bones, washed and kept aside

  • You need 2 of medium-sized onions, finely chopped

  • It’s 2-3 of tomatoes pureed

  • It’s 1-2 of green chillies sliced

  • Prepare 3 tablespoons of ghee

  • Prepare 1 teaspoon of fresh ginger cut into juvenile

  • Prepare 1 teaspoon of fresh garlic grounded

  • You need 5-6 of green cardamoms crushed

  • You need 1 of clove

  • You need 1 of Bay leaf

  • It’s 2 of black cardamoms

  • You need 1 of cinnamon stick

  • You need 2 of peppercorns

  • It’s of Fresh coriander and mint leaves chopped for garnish

Steps

  • Heat desi ghee in a pressure cooker. Add all the whole spices except green cardamom..
  • Just when the spices begin to crackle, add chopped onions. Fry onions till they turn golden brown..
  • Add ginger garlic and saute for a minute. Do not over fry ginger/garlic. Add mutton and salt. Adding salt at this stage helps to cook mutton quicker. Fry mutton till it turns reddish-brown..
  • Add pureed tomatoes and crushed green cardamom a. Saute till ghee starts to separate. Add sliced green chilies..
  • Add 2 cups of water and pressure cook for 10-15 minutes—the time in which mutton cooks depends on the quality of the meat used..
  • Turn off the flame and let it rest for 5 minutes. Remove the cover of the cooker and give the curry a good boil for 5-7 minutes. You can reduce the consistency of the curry as per your taste and requirement..
  • Garnish with fresh chopped coriander and mint leaves.
  • Serve hot with steamed rice..

I highly recommend using a 'meat masala' which really takes the guesswork out of this, and I used Lala's Mutton Curry masala for this one. You can go ahead and try Shaan as well, a brand which make fantastic masalas. Based on a traditional Pahadi family recipe, this curry is spicy and full of flavor. Try this recipe and you will love it! Serve with basmati rice or Chapati and any other curried dish.
