  • 4 pieces of chicken thighs(1 used 3,it's all I had left?)

  • 2 of large tomatoes pureed

  • 4 of large pre-boiled cubed potatoes (optional)

  • 1/2 cup of water

  • 1/2 cup of milk full fat milk

  • 1 of capsicum (green bell pepper) diced

  • 1/2 cup of cilantro/Corriander

  • 1 of small carrot thinly sliced

  • 1 tsp of turmeric powder

  • 1 tsp of black pepper

  • 1 pinch of salt to taste

  • 2 tbsp of dark soy sauce

  • 2 tsp of zest of a lemon

  • 4 tbsp of butter

  • 2 tsp of garlic paste

  • 1 tsp of ginger paste

  • 1 of large onion

  • of Juice of half a lemon

Steps to make Creamy butter garlic lemon chicken:

  • Frist we marinate our chicken. In a bowl, add the soy sauce, salt 1 tsp lemon zest, 1 tsp garlic paste, salt, black pepper, and turmeric powder. Mix well then add the chicken, allow to sit for about 10-15 minutes
  • After 15 minutes, add 2 tbsp of butter in a pan over medium heat, add the chicken pieces and allow each side to cook for about 5 minutes. Remove and set aside. Do not dispose off the remaining marinade. We'll use it in the sauce
  • In the pan, add the remaining 2 tbsp of butter, add in your onions, and stir for about 2 minutes untill they start to caramelize, add in green bell pepper, carrots, garlic and ginger and sauté. Cover and allow to cook stirring occasionally for 2-3 minutes. Add the pureed tomatoes,remaining lemon zest and some salt the cover and allow to cook 2 minutes.
  • Add in your chicken, if you opt for potatoes like me, this is when you put them in, then squeeze in the juice of half a lemon, add the remaining black pepper and turmeric powder, mix and let cook for a minute then add water. Let cook for 3-4minutes
  • Finally add milk and cilantro,mix then cover and allow to cook for 5 minute switch off your heat.
