1/4 cup of Walnut kernels
1/3 cup of Basil leaves, firmly packed
1 1/2 tsp of Grated lemon rind
1/2 cup of Sundried tomatoes
2 tbsp of Water
4 of Chicken breasts
1 of Olive oil for frying
1 tsp of Crushed garlic
1 of (Smashed Canellini beans on the side)
2 can of (400g) cannellini beans, drained and washed
1/3 cup of Chicken stock
1 tbsp of Lemon juice
1 of Steamed veggies of your choice
Add chicken breasts and press down into the sauce. Remove the chicken from the oven and top with slices of mozzarella and tomato. While the chicken is broiling, you can chiffonade (cut into thin strips) the basil. Drizzle the balsamic glaze over the chicken and top with basil.
