  • 2 of large tomatoes, deseeded & diced

  • 2 of avocados, peeled, pitted & diced

  • 6 tbsp of red onion, finely chopped

  • 2 tbsp of extra-virgin olive oil

  • 1/2 tsp of black pepper

  • Preheat the oven to gas 6 / 200C / 400°F and line a baking tray with foil
  • Toss the salsa ingredients together gently and set aside
  • Brush the salmon fillets lightly with oil and season with a little salt

I know its almost the end of January, and I am wishing you all so late. I was in India on a very long vacation and came back last week. Place the salmon fillets onto the foil, sprinkle with basil, top with tomato slices, drizzle with olive oil, and sprinkle with the Parmesan cheese. Drizzle the salmon with a little olive oil and season well with salt and pepper. Once you pull the salmon off the grill, immediately top it with a few pats of the tomato butter.
