Vegetable Pad Thai

Vegetable Pad Thai. Cook fettuccine according to package directions. Meanwhile, in a small bowl, combine the vinegar, soy sauce, brown sugar, fish sauce, lime juice and hot sauce until smooth; set aside. Place noodles in a bowl and cover with very hot tap water. Prepare noodles according to package directions. Drain; rinse well and drain again. Make Vegetable Pad Thai using 10 ingredients and 5 steps quickly.

Ingredients

  • 2 tbs of olive oil divided

  • 1 cup of rice noodles

  • 1 of medium head of broccoli

  • 1 cup of mushrooms

  • 1 cup of sprouts

  • 1 cup of carrots

  • 1/2 of small red pepper sliced thin

  • 1 of medium garlic cloves minced

  • 4 of green onions chopped

  • of Vegetable stock

Steps

  • Heat stock
  • Bring a large pot of water to a boil. Once boiling, add your rice noodles and blanch the noodles for 4-5 minutes. Once done place noodles in an ice bath.
  • While your noodles are cooking, heat another tbsp. of olive oil in another large pan then add in your broccoli, carrots, onions and red pepper. Cook for about 5-10 minutes or until softened. Add in the minced garlic and cook for another minute or two more. Drain the rice noodles and to the pan of veggies.
  • In a small bowl, whisk together all of the sauce ingredients until well combined pour all over the noodles, veggies.
  • Divide between bowls, and top with Penutian, sesame seeds and chopped cilantro or parsley. Serve warm.

Instead, add in more zucchini and peppers – you could even. Drain well in a colander and cover with a dampened paper towel. The Vegetarian Pad Thai is a simple and quick dish to make but is one of those dishes that has to be made fresh. The vegetables, sauces and noodles all stir fried on high heat gives the noodles the perfect texture and authenticity.  As you continue to make it you will notice that you like it bit less sweet or a bit more spicy, so continue to alter those tastes and have a fun time.
