Southwestern Salmon. Great for a quick dinner or for meal prepping. So earlier this week I shared my southwest salmon burgers as part of Burger Month. This simple, single-skillet supper is packed with bold flavor, but is quick enough for a busy weeknight. This foolproof recipe for salmon is brightened up with a little spice and zesty cilantro-lime butter that you're going to want to slather over everything from here on out. To cook Southwestern Salmon you need 10 ingredients and 3 steps easily.

The ingredients needed to make Southwestern Salmon:

  • 1-1/2 c of lightly packed fresh cilantro

  • 1/4 c of water

  • 2 T of lime juice

  • 1 tsp of ground cumin

  • 1/2 tsp of salt

  • 1/4 tsp of black pepper

  • 1/4 tsp of hot pepper sauce

  • 1 lb of salmon steak, cut into 4 portions

  • 1 of yellow bell pepper, cut in strips

  • 1 of red bell pepper, cut on strips

Steps to make Southwestern Salmon:

  • Combine first seven ingredients in food processor or blender and puree. Transfer to large zip-top bag. Add in salmon and marinate in refrigerator for 30 min.
  • Preheat oven to 400°F. Spray 9" baking dish with cooking spray. Layer pepper slices and bake 15 min, turning once.
  • Remove salmon from marinade, discard marinade. Place salmon on top of peppers and bake until done, about 5 min each side.

Place the salmon on a baking sheet and brush it with the grapeseed oil. In a bowl, stir together the paprika, chili powder, salt, pepper, garlic and lime zest. Sprinkle it evenly over the top of the salmon filet and press gently to adhere.
