Butter chicken

Butter chicken. Butter chicken is a great, ever-evolving, cross-continental dish found in Delhi, London, New York, Perth and most points in between. In its purest form, it is yogurt-and-spice-marinated chicken. Melt a few tablespoons of butter in a skillet over medium heat. Butter Chicken (Murgh Makhani) is one of the most popular curries in the world and yet happens to be one of the easiest! No hunting down hard to find ingredients, this is a Chef recipe that makes the most incredible curry sauce. To cook Butter chicken you need 18 ingredients and 8 steps quickly.

The ingredients needed to make Butter chicken:

  • 500 gms of chicken(boneless)

  • 3/4 tsp of lemon juice

  • 1 tsp of salt

  • 1 tsp of red chillie powder

  • 3/4 tsp of crushed kasuri methi

  • 1 tsp of turmeric

  • 1/2 tsp of garam masala powder

  • 1 tbs of Ginger Garlic paste

  • 1/2 cup of thick yoghurt

  • 1 of cinnamon stick

  • 2 of cloves

  • 2 of green cardamons

  • 1-2 of green chillies slit

  • 4 of large tomatoes pureed and filtered to remove seeds and skin

  • 14 of cashew nuts blanched

  • 1/4 tsp of sugar

  • 80 ml of chilled cream

  • as needed of Salt

Steps to make Butter chicken:

  • Marinade chicken with lemon juice, chillie powder and salt for 20 minutes.
  • Marinade again with yogurt, kasuri methi, oil, turmeric, ginger garlic paste and garam masala powder. Refrigerate for 3 hours.
  • Add cashew in a blender jar along with tomatoes and make smooth puree. Strain puree if not too smooth.
  • Heat 1tsp butter in a pan and add marinated chicken. Fry on high flame till moisture evaporates.
  • Heat a pan with butter and saute cinnamon, cloves and cardamons for a minute. Add ginger garlic paste green chilles and fry for few minutes. Pour in tomato cashew puree. Mix and cook till the paste becomes thick.
  • Pour 1 cup water. Bring mix to boil and simmer for 5 minutes.
  • Add chicken and simmer for about 5 minutes. Add garam masala and kasuri methi and simmer for 2 minutes.
  • Serve garnished with coriander and some cream. Can be served with rice or paratha.
